Turkey Time
You need a larger size rack with drip pan, A brining bucket ( 5 Gal.), an injector and imagination.
We started with an all natural free range turkey- 15 Lbs, from a small farm in Indiana which I purchased from Pure Pastures in Plymouth Mich.
24 Hr. Brine
1 Gal water/ 5 Lbs Turkey- so I used 3 Gal for this 15 pounder.
6oz. Sea Salt or 2oz/Gal
1 lemon, 1 lime 1 orange all cut in slices- Add to water
Take Turkey out of brine, rinse, pat dry with paper towels and let sit on rack for about an hour before next step.
Bake time- I use 45 min/ 5 Lb at 350f.
Made a mix of Michigan made-organic maple syrup 3 oz. and grass fed butter 1 stick 4 oz.- melted down
Added the butter/ maple mix to an “injector” (bought at Target) and injected mix under the skin of turkey in several areas.
Brushed on the butter/maple mix on the skin of the Turkey.
Spice mix 2oz sea salt, 2 TBS gran garlic, 1 TBS paprika, 1 Tbs Curry Seasoning, 1 Tbs Cummin, 1 Tbs Chilli powder
Mixed all spices in a ss bowl, added to shaker ( dredge) and added to turkey.
Transferred to baking rack over a drip pan (bought at Target) which I lined with foil
Preheat oven to 350f- budget for 31/2- 4Hr cook( use a temp. probe to get to 165f. place probe in meatiest thigh of turkey).
Did not do a stuffing, but that should not stop you.(Keeping my carbs down)
Drip pan veggies- Up to you- I recommend some sweet potatoes although I love the white organic sweet potatoes (please soak the potatoes for an hour before use), one big onion and organic yellow, orange carrots. Chop up veggies (if carrots are small no need). Add the Spice mix to veggies and hand mix in a large SS. bowl.
Add veggies to drip pan when you have an hour left, so around the 21/2 hr mark for this 15 LB Turkey, and allow the juices from the turkey soak the veggies.
Each hour of bake I like to brush on more of the butter/maple mix to the skin, so set your timer as a reminder.
Check your probe and place in a few areas to make sure its completely baked 165f is what I like it at and make sure the potatoes are ready- taste will tell.
Note that the weight of Turkey and Temp. probe determines cooking time, and be careful when you add veggies to drip pan the rack will be very hot, best if someone helps lift the rack, so that its easy to add veggies to tray. This is what our turkey looked like- it was amazing!
