Bison Tongue

protein 17gms/ 100gms

fat 20gms/ 100 gms( all healthy unsaturated fat that converts easily to energy)

potassium 255gms/100gms (helps your muscles work)

phosphorus 218 gms/100 gms (good for bones and teeth)



Start with Bison or Grass fed beef tongue - I purchased mine at Butcher Boy in Warren, MI

In a large pot add:

approx. 8- 10 qts. water,

Fresh garlic(6 bulbs) ,

4 Tbs sea salt

A large onion peeled and quartered

Bring water to a boil and add the tongue- reduce flame to medium and allow 3-4 hours of boiling more or less depending on the size.

Tongue is ready when the skin peels off easily

Cut meat into small thin squares and season with cracked black pepper and sea salt

SIDES:

Avacado, cilantro crema-

1 large avacado,

1 bunch of chopped cilantro,

2 Tbs sea salt

4 oz greek yogurt

2 fine chopped garlic cloves

4 oz avacado oil

2 oz apple cider vinegar

2 fresh squeezed limes

Place contents in a blender and puree

Organic white corn tacos- heat on flat grill to warm

Onion/Cilantro Mix

1 chopped onion and 1 chopped cilantro mixed together with 1 fresh squeezed lime

Chopped Romaine
