Marinated bison kidneys

I trimmed the kidneys and cut along the natural lining.

Trimmed the fat ( which I will use later when we are grilling steaks), placed the cut, trimmed kidneys in a plastic container and added 2 TBS of red wine vinegar, chopped fresh garlic, fresh homegrown rosemary, sea salt, tossed it all together for later use.

Brought out the marinaded kidneys, scrambled 3 fresh from the farm brown eggs, added sausage fat and a little grass fed butter to my hot pan.

Added the kidneys to the pan and got a nice sear on both sides of the kidneys, salted them a bit and added the eggs.

Pure heaven on a plate- amazingly good
